Vegan Shredded "Chicken" Tacos (Instantpot, Oil Free)

Tacos have always been one of my favorite foods to eat, so when I made the switch to eating a whole food plant based diet I wanted to find ways to create similar tacos that I had loved eating growing up. So I wanted to add some familiar flavors to always versatile green jackfruit. We love enjoying this recipe on tacos with some jalapeno lime guacamole, black beans, pinto beans, rice and some homemade fat free refried beans. If you have leftovers this recipe reheats great, and we love to mix in some BBQ sauce to make barbecue shredded "chicken" tacos for lunch the following day.

Here's what you will need!

  • 2 cans of young green jackfruit

  • 1 cup of water

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp of crushed red pepper flakes

  • Food Processor

  • Instantpot


  1. Drain and rinse your jackfruit

  2. Place jackfruit into the food processor using the dough blades

  3. Process for 10-20 seconds

  4. Place all of your ingredients including the shredded jackfruit into the instantpot

  5. Give everything a good stir

  6. Set your instant pot for 10 minutes on the pressure cook setting

  7. Quick release
