Sweet & Spicy Rice Noodles with Steamed Vegetables (Vegan, WFPB)

Many of us live extremely busy lives, which normally means getting home late and have a minimal amount of time to prepare dinner. I know that this is the case for Dr. Miller and myself on occasion and that is why I have come up with some really simple meals that I have found can be made in less than 20 minutes. A great trick I use regularly and show in todays sweet and spicy rice noodles with steamed vegetables recipe is steaming vegetables while boiling noodles. This can save a ton of precious minutes and its a great way to utilize just one stove top burner if you are making multiple dishes. When I make rice noodles I normally opt for tossing them in a simple sauce and then adding in the steamed vegetables.

Here's what you will need!

  • 8 oz rice noodles

  • 1 tbs chili paste

  • 1 tbs rice wine vinegar

  • 1 tbs maple syrup

  • 1 tsp garlic powder

  • 1 tsp onion powder

Directions:

  1. In a large pot bring 8 cups of water to a boil

  2. Add in the rice noodles and place the steamer lid on top of the pot

  3. Add the frozen vegetables into the steamer

  4. Cover the steamer and allow to boil and steam for 10 minutes

  5. In a sauce pan combine the maple syrup, chili paste, rice wine vinegar, garlic powder & onion powder

  6. Stir until the garlic and onion powder has been dissolved

  7. Simmer on a low to medium heat while the vegetables are steaming and the noodles are boiling

  8. Uncover the vegetables and set to the side

  9. Drain the water from the noodles and then toss the noodles with the sauce

  10. Add in the steamed vegetables

  11. Top with your favorite soy sauce, liquid aminos or coconut aminos
