You might be thinking, "Oh great, another sweet potato recipe...". If this is what you're thinking, then you are right...it's another sweet potato recipe! As many of you know, sweet potatoes are one of my all time favorite foods to use in recipes and to eat by themselves. These orange, purple and white starch heroes are full of life giving energy, vitamins, minerals, and the one thing we could all use some more of...fiber! We are getting near the middle of January, which means it is the moment of truth for many people who made New Year resolutions related to diet or weight loss. With that in mind, I know that having a plethora of simple and delicious whole food plant based recipes made a big difference in why I was able to leave the SAD way of eating, go vegan, and lose 100 pounds. So if you are looking for a tasty and healthy recipes that is quick to make and calls for just a few simple ingredients, today's sweet potato pie pudding is just what the doctor ordered.

Here's what you will need!
1/4 cup plant based milk
1 tbs maple syrup
1 tsp vanilla extract
1/4 tsp cinnamon
Place all of the ingredients into the food processor
