My sweet potato addiction is reaching new levels! I love just eating a few perfectly cooked sweet potatoes, or even making a delicious whole food plant based chocolate sweet potato pie, but my favorite way to use sweet potatoes is in nice cream. I posted a chocolate sweet potato nice cream about a week ago and that seemed to be a hit with a lot of nice cream fanatics like myself. So I wanted to share my sweet potato pie nice cream because it is my favorite way to flavor a delicious and healthy sweet potato nice cream. I hope you love this recipe as much as I do!
Here's what you will need!
2 cups of cooked and frozen sweet potato chunks
1/4 cup of a plant based milk
1 tbs maple syrup
1/2 tsp cinnamon
1/8 tsp clove
1/8 tsp nutmeg
Place all of the ingredients into the food processor
Process together for 30-60 seconds (stopping and scraping the sides down if needed)
