I love starting my day with some low fat peanut butter and celery and then moving onto the main part of my breakfast. And on days where I know I will be going out and doing some high energy activities I make sure to fuel up with some delicious whole plant foods. Recently I have had a lot of beets ready to harvest on the farm and I was looking at different ways that I could prepare them, and that is when I came up with my superman smoothie. This is a quick and nutritious way to get that extra energy and utilize the amazing vasodilating property of beets. I can remember back to my time playing football at Nebraska when we would use a beetroot powder before working out to increase performance. I am using those same properties of the beets now before I go on a hike or bike ride.
Here's what you will need!
6 oz of beets and stems
1 cup of a plant based milk
1 cup of water
2 tbs unsweetened cocoa powder
Place all of the ingredients into the blender/ food processor/ blender bottle
Blend on a medium-high speed for 10-45 seconds until a smoothie consistency
