Southwest Spinach Salad (Vegan, Oil Free)

One of the things that has helped me as I've lost 100 pounds and kept it off is eating green leafy vegetables! My favorite right now is spinach. Everyday I try my best to eat two spinach salads, which gives me a grand total of 1 pound of green leafy vegetables eaten every day. Like most of my recipes I try to keep my salads as simple as possible so you can make them at home in a hurry.

Here's what you will need!

  • 8 oz of fresh spinach

  • 1/2 cup of black beans

  • 1 tbs whole flax seed

  • 1 tsp balsamic vinegar

  • 1 tsp balsamic vinegar glaze or reduction

  • 1 tsp BBQ sauce

  • 1/2 tsp liquid smoke

Directions:

  1. In a large bowl mix together the vinegars, BBQ sauce, liquid smoke & black beans

  2. Mix in the spinach

  3. Sprinkle on the flax seeds
