Savory Apple Holiday Stuffing (Vegan, WFPB)

I have been working hard in the kitchen these past few weeks to ensure that all of my holiday vegan and whole food plant based recipes are out with time to spare before Thanksgiving. I know that this time of year can be a difficult time for many when it comes to food choices. I know that there are a lot of individuals that decided to start eating a healthy vegan diet this year, who are going to be pressured to go off the course this holiday season. That is why I believe it is so important to have great plant based recipes available in order to succeed when it comes to food choices during Thanksgiving and Christmas. Stuffing has always been a big deal in my families household. I can't think of a Thanksgiving where we didn't have atleast three different variations of stuffing at the table. This year I want to help you bring the best tasting and most health promoting stuffing to your upcoming holiday get togethers. This apple stuffing is full of flavorful spices that are sure to get you in the holiday spirit. I find that the apple doesn't overpower this dish, but rather supports the other savory seasonings fantastically. I ended up baking this for around 40 minutes at 375 F to get my desired crispness, I would recommend checking at around 30 minutes to make sure you catch it at the perfect moment. Here's what you will need!

  • 1 vegan and oil free baguette

  • 2 1/4 cups vegetable broth

  • 2 medium onions

  • 2 medium crisp red apples

  • 1 tbs minced garlic (4 cloves)

  • 1 tbs sage

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1/4 tsp black pepper

  • Mixing bowl

  • Baking dish


  1. Cut the baguette into 1/4"-1/2" cubes

  2. Baked the bread cubes at 250 F for 25-30 minutes to crisp up

  3. Dice the onions

  4. Sauté the onions and minced garlic in 1/4 cup vegetable broth on the stove top at a medium heat for ~8 minutes

  5. Dice the apples into 1/4"-1/2" pieces

  6. Mix in the remaining two cups of vegetable broth and the dry spices to the sautéed onions and garlic

  7. In a large mixing bowl combine the liquid mixture to the crisp bread cubes and apple pieces

  8. Transfer into the baking dish

  9. Bake 375 F for 35-40 minutes
