This recipe is my wife's all time favorite on the go breakfast. She normally has overnight oats in the morning, but as a professor she has to be into work early some days. If it is one of those days I will get up and make her a peanut butter chia smoothie before she heads out for a day teaching at the university.
Here's what you will need!
1 tbs chia seeds
2 tbs defatted peanut powder
1/2 cup of plant based milk
Place all of the ingredients into the food processor or blender
Blend on high for 30-60 seconds
