We recently spent a weekend in Georgia and after seeing an incredible amount of peach trees, I was inspired to make a peaches and cream nice cream. Growing up I was not a very big peach fan, I'm not sure if it was the fuzzy exterior or the softness of the fruit. But as I have progressed along with my plant based journey I have found that I cannot find a fruit that I don't absolutely love, and peaches are now one of my favorites. They are also a great fruit to make plant based desserts with because even when they are not in season you can find them in the freezer section at almost any grocery store. When I first shared this recipe with Dr Miller I was glad that I had taken a few bites, because when I walked back into the office the rest of the bowl of nice cream had disappeared!
Here's what you will need!
Place all of the ingredients into the food processor
Process together for 60-90 seconds (stopping and scraping the sides down if needed)
