As summer is winding down I have been loading up on fresh fruits and veggies to use in my recipes and cooking for Erica and I. With all the fresh fruits and veggies around, I have been finding ways to use up the frozen ones that have been in my freezer for a while. While I was looking through my freezer for things to use I saw a bag of a frozen berry medley. This particular medley has strawberries, blackberries, blueberries and raspberries. As soon as I saw this I knew exactly what I was going to be making. It's still been really hot here in Virginia, but I know that Fall will soon be here so I am eating all of the nice cream that I can while its still hot outside. This is another one of my recipes that is great to make for the kids as a delicious and healthy treat, or just a treat for yourself when you are wanting a big bowl of nice cream.
Here's what you will need!
2 cups of a mixture of frozen strawberries, raspberries, blackberries & blueberries
1/4 cup of a plant based milk
1/2 tsp vanilla extract
Place all of the ingredients into the food processor
Process together for 30-60 seconds (stopping and scraping the sides down if needed)
