InstantPot Jackfruit Barbacoa (Vegan, Oil Free)

We eat a lot of tacos in our house. Some days we will make them with black beans & pinto beans and always with a dollop of Spicy Jalapeño Guacamole! And as of recent we have been making them with jackfruit! I love this recipe because you can really be as creative as you'd like with the seasoning to make this jackfruit your own.

Here's what you will need!

  • 2 cans of young green jackfruit (drained and rinsed)

  • 1 cup of water

  • 1 tsp crushed red pepper flakes

  • 1 tsp ground black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • InstantPot


  1. Drain and rinse the jackfruit

  2. Using a fork press down the jackfruit until it is a roughly shredded texture

  3. Add the jackfruit and remaining ingredients into the instantpot

  4. Set the instantpot for 30 minutes on the pressure cook setting

  5. Quick release
