I've become quite the nice cream addict as of lately. Which as it turns out is not a bad thing! This recipe just like all of my other nice cream recipes is full of fruit and is low fat, so keep that nice cream coming. I used to really love the flavor of mint chocolate chip ice cream before going plant based, actually I really loved the mint ice cream and just went along with the bits of chocolate. So for my whole food plant based version I wanted to hold the chocolate and go full on minty fresh with this one (as a side note you can definitely add some chocolate, no judgment from me!). This is another recipe that takes less than 5 minutes and can be eaten any time of day or on the go.
Here's what you will need!
1/2 tsp vanilla extract
1/4 tsp peppermint extract
1/8 tsp spirulina powder
1/4 cup of plant based milk
Place all of the ingredients into the food processor
Process on medium-high speed for 30-60 seconds (stopping and scraping the sides if needed)
