I recently reached my 100 pound weight loss goal and I wanted to share a little more about the journey that led to me adopting a whole food plant based diet and losing 100 pounds.
I was a starting college football player for the University of Nebraska when I suffered a career ending back injury that eventually required a 6 and a half hour surgery. After surgery I was frustrated with how much weight I was continuing to gain, and due to my limitations from my surgery I was unable to do any sort of exercising. What seemed like extreme limitations at the time eventually lead me to finding the good news of a whole food plant based diet. I have used that diet and the simple recipes that I share to not only lose 100 pounds but keep it off for good!
