Blueberry Cobbler InstantPot Oatmeal (Vegan, WFPB)

We really love having InstantPot or overnight oatmeal on the weekends. And I have been trying to share a oatmeal recipe every weekend for everyone to try. Our favorite way to enjoy oatmeal is to load up the InstantPot before bed and then setting it to cook so that when we wake up the following morning we have warm and delicious oatmeal ready to eat. I have shared a few oatmeal recipes already including my pumpkin pie oatmeal and orange dream oatmeal, and this blueberry cobble oatmeal is just as fantastic! This recipe doesn't only have to be served for breakfast either, this recipe makes for a fantastic dessert following a delicious plant based meal.

Here's what you will need!

  • 3 cups of water

  • 2 cups of frozen blueberries

  • 1 cup of a plant based milk

  • 1 cup of steel cut oats

  • 1/4 cup of maple syrup

  • 1 tsp vanilla extract

  • InstantPot

Directions:

  1. Place all ingredients into the InstantPot

  2. Set the InstantPot for 20 minutes on the pressure cook setting

  3. Let the InstantPot naturally release (~30 minutes)

  4. Open up your InstantPot and give it a really good stir
